I just posted this on my blog and wanted to share it here. I found it while out and about on the net. I have added some items to the original list.  It is long but is well worth it I think.

Sugar Free Stained Glass Pie Dessert

Sugar Free Stained Glass Dessert

When this dessert is cut into and placed on a dessert plate, it looks like stained glass!
(this dessert can be made 2-3 days in advance before serving)

Ingredients:
1 box yellow sugar free jello
1 box red sugar free jello
1 box green sugar free jello
1 box orange sugar free jello
1 box blue sugar free jello
(note: the jello can be any flavor, just different colors and
it doesn't matter if you use Jello Brand jello or store brand jello.)

1 box sugar free vanilla pudding

1 pint heavy whipping cream (the kind you whip yourself)
2 packets of Splenda (or Equal, or Sweet-n-Low, etc.)

Prepare each box of jello seperately, according to package, but use 1/3 cup less water so that the jello will be 'stiffer' when cooled (easier to cut and work with). Cool until well set.

While jello is cooling, prepare the vanilla pudding according to the package. Cool to about room temperature.

When each jello has 'set', cut each color into cubes or pieces similar in size. Don't worry about perfect cubes, just try to cut it up so that the pieces you end up with are all similar in size and shape. Put all different colored cubes into one big bowl.

Whip the heavy cream and Splenda until soft peaks form. Fold in the pudding and mix carefully. Carefully add jello cubes and stir until all jello cubes are coated.

Pour into a 9x12 glass baking dish (pyrex, anchor, any GLASS baking dish will do) and cover with plastic wrap. Refrigerate for about 2 hours to firm up the dessert. Serve well chilled.
