Christmas Recipes



Okay, the last minute preparations are upon us!! Everyone is scrambling to get finished!! Need a couple of last minute recipes?? Here are a couple of great salad recipes and a couple of great breakfast recipes!! Enjoy!!
Cheese Strata
2 cups ( 3 slices) bread cubes, trimmed
1/2 lb sharp cheddar cheese cubed
1/2 lb bacon, cooked and crumbled (ham or shrimp can be substituted)
1/4 cup butter, melted
1/2 lb fresh whole mushrooms
3 large eggs
1 3/4 cup milk
1 tsp prepared mustard
1/4 tsp salt

Makes 6 servings:

In greased 9X13 glass cake pan, place 1/2 bread cubes in a layer. Layer half the cheese, bacon and butter. Repeat layers and arrange the mushrooms (sliced) on top. Bake uncovered at 300 degrees for 1 hour.

Note: this is better if prepared in advance and refrigerated overnight until baking time.

Elizabethan Salad (also known as the Pink Stuff)
1 large pkg Orange Jello
½ cup sugar
1 12oz container Cool Whip
1 lg can crushed pineapple, drained
4-5 bananas (depends on how many you want)

Boil 2 cups water, dissolve Jello and sugar together. Add 2 cups cold water. Let set PARTIALLY (until it’s like runny slime!!). Fold in Cool Whip, add pineapple and bananas and let set completely.
 
I use a frosted and clear bowl. Looks very festive. We have this every year . . . .
kids love it (so do I!!)


Christmas Morning Casserole
20 oz pkg frozen hash browns, thawed
4 c. shredded Monterey Jack cheese
2 c. dice cooked ham
7 eggs
1 c. milk
1/2 tsp salt
1/2 tsp ground mustard

Place hash browns in a greased 13x9 baking dish. Sprinkle with cheese and ham; set aside. Beat together eggs, milk, salt and mustard; pour over ham. Bake, covered, at 350 for 1 hour. Uncover and bake 15 more minutes or until golden. Makes 8 servings.

Christmas Salad
1/4 c chopped almonds
1 Tbl + 1 tsp sugar
1 Gala apple, thinly sliced
1 kiwi fruit, sliced
11 oz can mandarin oranges, drained
1 c sliced strawberries
3 c torn iceberg lettuce
1 small head romaine lettuce, torn
2 stalks celery, thinly sliced
5 green onions, sliced
1/4 c veg oil
2 Tbl white vinegar
1 Tbl fresh parsley, chopped
2 Tbl sugar (yes, sugar is used twice)
1/2 tsp salt
1/8 tsp pepper
Star Croutons

Cook almonds and 1st sugar in a skillet over medium heat, stirring constantly, until almonds are golden. Pour onto waxed paper; cool. Break almonds into pieces.

Combine fruit, lettuces, celery, and onions in a large bowl.

Whisk together oil, vinegar, parsley, 2nd sugar, salt and pepper in a small bowl. Pour dressing mixture over salad; toss gently. Sprinkle with almonds and Star Croutons; serve immediately. Makes 8 servings.
